Pista Kulfi (Pistachios Ice Cream) Recipe by Manjula Indian Vegetarian Gourmet

Today I will be making pista kulfi or pistachios ice cream. It's a great ice cream to serve anytime of the day. And what can be better for hot summer days than having the ice cream. This recipe will serve 6-8. And it's very easy to make. We need 4 cups of whole milk 1 slice of white bread 1/4 cup of sugar 2 tablespoons of crushed or sliced pistachios 1/2 teaspoon of crushed cardamom 1 teaspoon of cornstarch Remove from all sides the crust from bread. And cut them in small pieces it helps to blend. I am going to put the bread in the blender. Put the cornstarch. And 1/2 cup of milk. Blend it together. And make a fine paste. This is ready. And we will keep aside to add in the milk later on. I have greased the frying pan. And I like to use wide frying pan because it makes it faster to boil the milk. I am going to open on medium high. Until this milk comes to boil you do have to stir. Because you don't want milk to burn. It should take about 5-6 minutes before it will start boiling. Milk is boiling. We have to reduce this milk to about 2 cups. And when you are stirring make sure you take out the sides. Before milk starts to boil you have to stir very often like every half minute or so. But after milk comes to boil it does not burn in the bottom that quick. So you don't have to stir that quick you can do it like after every 1.5 minutes. So after milk has started boiling. It has been 9 minutes. Milk looks almost about 2 cups. And I did stir it couple of times in between and removed the build up from the sides. Going to add the mixture of bread and cornstarch. Mix it really well. This mixture I added in the kulfi it helps not building up the water crystal. So this should boil again for about 4-5 minutes. I have been boiling this after I put the mixture in about 4 minutes. And after you put the mixture you do have to stir almost continuously. Because cornstarch has a tendency to sit in the bottom. It's time to add sugar. And pistachios. I am adding the pistachios because that's what my family likes. Instead of pistachios you can put the almonds or mix almonds and pistachios. Or really just make the cardamom flavor. We have to stir just for few more minutes. This looks ready. Going to add the cardamom. Add the cardamom in the end. That way it does not lose its flavor and smell. Going to close the heat. And let it cool off. Milk has cooled off and I am going to transfer this in the bowl I am going to freeze. After milk comes to the room temperature. You cover this with cellophane wrap. Touching all the way to the milk. It helps again not building up the water crystals. I am going to freeze this and it takes about 6 hours for freezing. I have made this kulfi yesterday it is ready. I am going to dip the bowl in the hot water. for just for a half a minute. And transfer this to the serving dish. So I have sliced the kulfi in 8 different pieces. So you can serve 1 or 2 at a time. It just smells so good the sweet cardamom. You can make these kulfi using popsicle moulds also So you can have individual and eat as a popsicle. This looks great. I am going to serve this to my friends tonight. Thank you.
