Spicy Cashews Recipe by Manjula, Indian Gourmet Appetizer

Today I will be making spicy cashews. They are a great party snack for holidays or simply to munch on anytime. Spicy cashews can be quite addicting. They are so good. This is a simple and delicious recipe. And makes a great holiday gift. This recipe can serve 6. For this recipe we need: 2 cups of cashew nuts (kaju) They are about 10 oz. 2 tablespoons of oil 1 teaspoon of roasted cumin seed powder (bhuna jeera) 1 teaspoon of salt 1/4 teaspoon of black salt 1/4 teaspoon cayenne pepper or red chilli powder 1/4 teaspoon of black pepper 1/2 teaspoon of mango powder (amchoor) First I will roast the cashew nuts in little oil. Heat is on, medium low. Add the oil. And cashews. You do have to stir them continuously. So they get roasted all around the same. It should take about 8 minutes. We have to roast them till they are golden brown. It has been about 4 minutes and it will take another 2-3 minutes. It’s getting brown very nicely. Cashews are done. Looking great. It has a very nice color and you have light aroma of cashews. I am going to turn off the heat and take them in a plate. Let it cool off for 3-4 minutes, before I will add the spices. As cashew nuts cool off little bit I am going to mix all the spices together. Cumin seeds Salt Black salt Mango powder Black pepper Cayenne pepper Just mix it together. And we are going to sprinkle over the cashew nuts. And mix them well. Cashew nuts are ready. So sprinkle them evenly. They are looking really good. And you can smell the roasted cumin powder. You can adjust the salt and pepper to your taste. Cashew nuts are coated with the spices, evenly. They are ready. Before serving, just wait till they cool off to the room temperature. Spicy cashews are perfect for these cold winter days. Make a hot cup of tea and enjoy this delicious snack. Spicy cashews are good for a holiday, office parties or give them as a gift.
